The award winning KILN Restaurant in Soho, London, has pushed the boundaries of Thai food and customer experience in the U.K. Winning National Restaurant of the Year 2018 and a Bib Gourmand, Advance was proud in supporting with the design, supply and install of the kitchen, bar and countering. This revolutionary approach to restaurant design, inspired by clients Ben Chapman and Brian Hannon’s “by the road side” experience in Thailand, created an open fired hearth boasting a Kiln and traditional Tao Charcoal cooking pots. Diners can sit at the bespoke stainless steel counter, now synonymous with KILN, watching as chefs prepare and cook dishes in the traditional Thai way.
Challenge
The biggest challenge with this KILN kitchen, bar and countering project, was space. The 50 cover restaurant was designed to have an open kitchen upstairs with a counter for walk-ins only, whilst the downstairs dining room was designed to facilitate the majority of the restaurants bookings.
Solution
As space was of a premium on this project, all of the working area’s had to be operationally designed to ensure full utilisation of the site’s space. On the ground floor, the Advance team bespoke built the kitchen and bar area’s, working closely with the fabricators on the grill design and countering especially. In the basement, Advance supplied a small butcher and prep area, with supporting dishwash section and cold-rooms.
